ToTT’s Best Brunch Ever – Delicious Morning Recipes To Savour!

Last Saturday, I was invited to ToTT Singapore to join them in the launch of their 3rd year anniversary cookbook, entitled ‘Best Brunch Ever – Delicious Morning Recipes To Savour‘, as well as that of their brand new e-commerce site. It was an exciting and truly delightful experience as I got to interact with other food bloggers, watch the chefs (featured on the cookbook) in action as well as taste the delightful renditions of their favorite brunch dishes!


Spaghetti Piccanti – c/o Chef Antonio Facchinetti

First dish by Chef Antonio Facchinetti was a hearty Spaghetti Piccanti – which is tossed with calamari, anchovies and a liberal sprinkling of homemade bread crumble to soak up all the briny flavors!


Eggs ‘à la Coque – c/o Chef Nicolas Joanny

Chef Nicolas of Nicolas Le Restaurant whipped up an elegant version of his Eggs ‘à la Coque’, gently steamed in their cups and served with deep fried Brik-wrapped prawn. This sophisticated dish was surprisingly easy to prepare 🙂


Cornbread Wedges with Bacon Jam – c/o Chef Dan Segall

US Celebrity Chef Dan Segall whipped up a delicious Southern classic of Cornbread Wedges with slow-cooked Bacon Jam which was just the right combination of savoury and sweet. I was skeptical at first, but ended up loving this comforting dish!


Bánh Cuốn – c/o Chef Chi Quang Trinh

Vietnamese Chef Chi Quang Trinh’s steamed rice rolls (Bánh Cuốn) filled with minced pork, black fungus and flavored with fish sauce was our favorite of the day. I love the simplicity of this humble, yet absolutely brilliant dish – so so so so good. I believe this is a traditional Vietnamese breakfast dish, and everything about it speaks freshness! I think fish sauce is simply magical 🙂

One thing I love about this cookbook is that its recipes span across diverse cuisine types, from Japanese to Spanish and even Singaporean! Singapore’s very own Chef Eric Low features a classic Homemade Kaya, as well as his very own version of Poached Chicken Roulade with Hainanese Chicken Rice that I absolutely can’t wait to try out for myself.
